Company: DODO BRANDS (Dodo Pizza, Drinkit)
Location: Moscow
Experience: Over 6 years
For 15 years, we at Dodo Brands have been creating and developing tech-driven fast-food brands through franchising. You certainly know Dodo Pizza, and we also develop Drinkit coffee shops.
And we are always looking for passionate people — enthusiastic professionals who care about what they do. Those who act boldly, support the team, and are open to new ideas to create cool solutions together and improve the customer experience.
We want to move from situational product management to strategic product management, and for this, we need a Dodo Pizza Product Director. You will be responsible for the menu, new product development, R&D, as well as quality and food safety across the network. Your task is to find key growth niches, increase the price-value ratio, and build a product strategy.
What you will do:
- Build a menu vision for 2-3 years and manage the portfolio: hits, new items, seasonal items, price points.
- Prepare an annual menu plan for Dodo Pizza: decide which items to launch, relaunch, update, support without investment, or remove from the menu.
- Manage launches from idea to post-analysis and maintain a launch calendar for a year ahead, deciding whether to launch, refine, or close an idea.
- Build the "guest → category → product → menu → price" connection and manage the menu as a system of categories with different roles for the business.
- Manage the product portfolio, define the role of each item (traffic, average check, margin, image), target food cost and margin, and revise them based on data.
- Turn hypotheses about guests and categories into tasks for R&D: taste, recipe, price, message for the guest. Test concepts, tastes, and names with guests and conduct pilots in a limited number of pizzerias.
- Coordinate launches with supply chain, procurement, operations, brand team, and QA.
- Lead the menu, R&D, and QA team: set goals, provide feedback, foster development, recruit people, and establish a unified process without gaps between stages.
What we expect from you:
- Experience: 7+ years in FMCG, QSR, restaurant, or food business, including 3-5+ years in leadership positions (Must-have).
- Results: responsibility for NPD and/or R&D results, not just development (Must-have).
- Scale and Team: launching products in a network of 100+ locations or in mass production, managing leaders of several departments.
- Systems Thinking: you see the menu, NPD, R&D, QA, and supply chain as a single process and identify gaps between stages.
- Strategic Thinking: you can move from situational decisions to a 2-3 year vision and set priorities across categories and niches.
- Guest Orientation: you validate menu decisions based on the price-value ratio for the customer.
What we are ready to offer you:
- Work in a global company with ambitious goals and large-scale tasks.
- A culture of freedom and responsibility. We value those who are ready to make decisions and take responsibility for them.
- Transparent conditions. Competitive salary, opportunities for growth and development;
- Hybrid work format.
- Paid training. Courses, conferences, specialized literature, and co-financing for English at Skyeng.
- Employee care. Voluntary medical insurance from day one, including dentistry, and mental health support through Alter.
